OlbrichtArom offers a range of special flavours for full flavour profiles in sugar-reduced products such as caramel or cotton candy floss.
From a technological point of view, sugar has many desirable properties. It is useful as a drying agent, binds water, acts as a preservative and is very easily soluble. Above all, however, sugar helps to give products body, texture, a pleasant mouthfeel, sweetness and specific flavour profiles resulting from the various reactions between the different raw materials during processing. Reducing sugar reduces these positive functions.
Our SugarBooster was specially developed for sugar-reduced products and helps to preserve and enhance the delicate overall flavour profile of sugar in end products without masking its specific taste.
